I'm so incredibly lazy during Spring Break. This is the last week, only a few days left, and I haven't done anything I said I would. I've been cooking a lot though, which was fun.
This is obviously a very basic recipe, just a spinach salad with things that I had around the house thrown in.
Ingredients:
1.5 cups spinach
1/4 cup dried cranberries
1/4 cup chopped pecans
1/8 cup pumpkin seeds
1/4 cup granola (I used a pumpkin granola I made earlier this week)
Vinaigrette salad dressing
Directions:
1. Cut off the stems of the spinach, and put the leaves in a bowl.
2. Throw in cranberries, pecans, seeds, and granola.
3. Pour the desired amount of vinaigrette on top.
4. Toss, and enjoy!
