Mum's Whipped Shortbread

I've been trying out different shortbreads, trying to find one that absolutely just melts in your mouth. I still haven't found one quite right, but so far this recipe wins. It's an old one of my mother's that she has had for some time now, you can tell by the crinkles and smudges of the aged paper.

Not so well.
Didn't rise. Then when I was leaving it for about 20 more minutes to see if it would do anything, I left the towel off the top, so when I went to remove it from the warming drawer, the top had hardened slightly.

Lemon Sugar Cookies

I've made these a few times last year, they are my mums favourite cookie of all time. She asked me if I could make them again today, and I wanted to try a healthy vegan version. So I used whole wheat flour, half the amount of sugar it called for, and I used agave instead of white sugar, and a few other tweaks.

Chocolate Spice Baked Oatmeal & Cinnamon Apple Dish

I'm been playing around in the kitchen trying to create a baked oatmeal dish, but I've been having trouble. I finally got the texture right today, it wasn't mushy at all! Sort of muffin-like, but a bit more solid. It wasn't quite right yet, I would only use one tablespoon of cocoa powder next time. This weekend I plan on perfecting a pumpkin bake with the leftover pumpkin puree that has been in my fridge for a couple weeks.. I wonder how long it can last in there?

Pumpkin Cinnamon Rolls

These cooked! They are vegan, so I wasn't really expecting them to cook on the inside, but they did, it worked! The only thing wrong with these are they did not rise one bit. I don't know why, but yeast seems to hate me.
Oh well, they're still delicious.

Mint & Mango Marinated Zucchini Spaghetti

I cannot stand zucchinis, so it came as a shock to me when I started salivating over this recipe. Mango and mint sauce? I thought I'd get over my fear of zucchini by making this.
So first of all, zucchini is a b*tch to shred. I tried to do it with this fancy shredder thing, to get the thin strands, and that took 30 minutes to get approximately 2 cups of the stuff.
The sauce on the other hand, took around 5 minutes total to prepare and blend, and it was DELICIOUS. I will definitively be making it again.

Bundt Cake

I'm so beating myself up for this... I FORGOT TO OIL THE PAN. UGH. WHAT DO I DO NOW. It's currently in the oven, and there is ten minutes left. So I hope when I attempt to take it out it cooperates.


This stupid thing would not photograph at all. I finally got this one, but I did not get ONE good shot of the inside. *sigh.* It was delicious, I think my dad ate more of it then I did!

Sweet Spiced Oatmeal

I've been pretty lazy lately, not doing much. This summer hasn't amounted to anything really. All I've done is tan a few times, watch tons of movies, read, and hoop. I have my first Skate Instructor class today, should be interesting. We have to wear helmets which is ridiculous considering the fact I used to figure skate and do competitions. I'm thinking maybe I can tell the instructor that and I won't have to... I hate wearing anything on my head, hats, helmets, ick.

I would have included the recipe if not for the fact that this chocolate pudding was supposed to be fudge sauce and it tasted so gross I had to scrape it off the pancakes... I will not be putting the original recipe as to not offend the maker, although it was most likely my own fault that it did not work out.

Funfetti Cupcakes

Tried out frosting cupcakes. It was so fun! I only have a few piping tips, and I ruined 4 ziplock bags, but oh well. The icing is pretty good for homemade, a bit too sugary but that's expected with tons of icing sugar.

Banana Pancakes

Wow I've been eating a ton of pancakes lately. Oh dear.  But they're so yummy I just can't resist!
Of course all the recipes I'm getting them from are from Chocolate Covered Katie. She's brilliant.

I am so tired! I fell asleep at 12am, and woke up at 11am, so you'd think I'd be awake. I feel so sleepy though, and stuffed. Brunch was incredibly filling! These pancakes are definitely for two.

Red Velvet Cupcakes

No recipe for this one since it came in a box, all I had to add were eggs and a few other things. I just want to show pictures of my lovely cupcakes <3 
They were delicious, and so pretty!


Red Velvet Pancakes for One

So as you can see I am totally 100% completely obsessed with all things red velvet. The recipe photos always look so gorgeous, I just have to try them! Most are filled with icky ingredients, so it's hard to find a good recipe. After creeping Chocolate Covered Katie's blog for a while, I discovered she had recipes that serve one! Then I found a red velvet pancake recipe for one and just haad to try it.

......Well, as you can see below, they didn't turn out so well. I followed the recipe perfectly, but oh well, I guess next time I'll have to change some things. I'll make sure to add sugar, 1 tsbp of cocoa instead of 2, and a smidgen more red food colouring. The taste was quite bitter because of the cocoa, and lack of sugar. I slightly burned the first 3 because the gas on my stove was turned up too high.. My bad!


To fix this slight disaster I smothered them in syrup, dusted on some icing sugar, and shook on some purple sprinkles. Om nom nom, the chocolatey goodness was divine! I thought I'd have to hoop for a while to burn off the calories from this chocolate heaven, but apparently there are only around 130 calories in the whole thing! I don't believe it, but it's better than thinking there are 300+!

Red Velvet Chocolate Chip Cookies

     I can't remember if I blogged about my past failure at making red velvet cookies. I was trying to make whoopie pies, but I didn't have enough red food colouring, so I tried adding yellow, then gave up. They ended up being thin chocolate looking cookies. They were yummy, but not what I was trying to make. 

     Of course they don't sell red velvet cake mix in Canada, so I've had to make do with what I could find.

I put a bit too much cocoa powder in these, because I didn't measure properly, I just sort of poured it in. Don't worry, I've learned my lesson!

The only thing I did to different was add strawberries and mini chocolate chips to a few pancakes. These were delicious, and I got around 50 small ones, between 2-3.5". Mmmmmmm.

Carrot Cake


So I've made my May goals, and I'm already almost done one! I feel great, it's so exciting. 

It's Mother's Day tomorrow, and I wanted to bake for my mom. I ended up making this Carrot Cake, and I'm giving some to the rest of my family, and baking my mom her favourite cookies, Lemon Sugar Cookies. I have the recipe on my blog, so check it out! They are SO yummy. Unfortunately I can't eat them anymore :(
Because guess what one of my goals was. To be Vegan for the whole month. I've wanted to be for a while, I think I've posted about it before. But it's finally working, because I actually want it!

Spiced Chocolate Oatmeal

So I was about to make scrambled eggs for my breakfast, and I got all the ingredients out, went over to the stove, and saw that the frying pan was dirty. of course, me being too lazy, I put the egg whites away, and pondered what else I could have. I came up with oatmeal, and as I was boiling the water and milk, I glimpsed the cocoa powder. That gave me the idea to make chocolate oats! It went quite well, I had to add a bit of brown sugar in the end to make it a bit sweeter, but that's up to you. I found that it reminded me a bit of rice pudding, maybe the texture? Anyways, if you have a chocolate craving, here's a bit of a healthier alternative.

I don't usually eat stir fry. I've hated it since I was younger, don't ask me why. I don't know what made me decide to make this, I think it happened spontaneously! hahahah. 


I think cabbage is one of my favourite vegetables. 

Banana Egg Whites

This was my morning breakfast. First day back at school since Spring Break, thought I should make a yummy nutritious one to hold me until lunch. This made quite a bit, and it was very filling. I thought the banana added a nice touch, since my dad used to add cut up banana slices to the top of an omlette when I was little. This has an interesting texture and smell, so it may not be for everyone, but I quite enjoyed it.

Blueberry Apple Toss

Spring has began. Spring cleaning anyone? None for me thanks, I'd rather spend my days curled up on the couch watching a new episode of UK Skins. I think that's the best show ever. I looove their accents, and I really wish I got the channel on tv. Silly cable. I watch it on my laptop, and don't tell anyone, but I watched the whole 5th season in two days. Teehee. Do you guys watch it, or have heard of it? And I'm not talking about this US MTV Skins trash. No no no! I'm talking about the original UK Skins. With their sexy British accents, having sex and doing drugs all over the place. Hahah! May be inappropriate, but I think it's hilarious.


Anyways, onto the actual food now.  This is just a little snack that I enjoy. It is pretty filling, and you can add all sorts of toppings!

Creamy Scrambled Eggs

Since the beginning of this year I've been trying to become Vegan. It's not working the greatest, but I have cut out cows milk, and I've lowered my intake of cheese, and yogurt. Oops, did I mention I've been Vegetarian since 2007? So it's not that big a leap. The only thing I've recently been finding hard not to eat, is egg whites. Not the full egg, since I've always hated the yolk, and the white is actually better for you. I think I've had scrambled eggs for dinner for the past two weeks! 14 grams of protein for 1/2 cup! Crazy, and delicious! 


Since the egg white itself is fairly bland, I find a tablespoon or two of salsa works like a charm to up the taste factor.


Chocolate Chip Cookies

......COOKIES! I bet your surprised aren't you? No? Okay then.


These were originally supposed to be thin and crispy cookies, almost wafer-like, but they didn't turn out that way. It may of been because I didn't use a mixer, I just did it by hand. Who knows.
