Pear & Almond Chocolate Spice Cake

Vegan things don't seem to like being cooked. They always appear raw on the inside, no matter the temperature of the oven, or the amount of time they cook for. This cake, although still tasty, was no exception.



Pear & Almond Chocolate Spice Cake
[original recipe here]

1 cup hot water
1/2 cup cocoa powder
2 cups whole wheat flour
2 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1 cup brown sugar
1/3 cup granulated sugar
1 cup apple sauce
2 flax eggs
1 tbsp vanilla extract
2 pears, diced
1/2 chopped almonds

Glaze
1 pear, diced thinly
3 tbsp brown sugar
2 tbsp butter
1/2 tsp cinnamon

1. Cook all ingredients over medium-low heat until pears are soft.
2. Strain the liquid, and pour over cake, letting it soak in.
3. Discard pears (I just ate them, they were tasty).
